簡單吃麵part 2- 咖哩烏龍麵Curry Udon Noodles

DSC09396我其實沒有在日本吃過湯烏龍,但某次在日本超市買了咖哩烏龍麵的組合包後,發現應該可以自己簡單用超市的咖哩塊複製類似的口味。我用圖中的一小小格的咖哩塊煮了一人份小砂鍋,味道已經很濃了,大家可以斟酌減量:)

如果想要加肉片,可以在麵煮好後,加入肉片。肉片熟了之後再加咖哩塊進去!

1. Put baby corn, carrot slices, green beans, shiitake mushrooms, tofu skin and 450 c.c. stocks into a claypot, bring to boil.

2. Add in one portion of udon noodles, and cook for 2 minutes. After that, add one cube of curry roux, let it dissolve completely. Garnish with thinly sliced scallions. The dish is ready to be served.  咖哩烏龍麵

番茄奶油龍蝦義大利麵Lobster Spaghetti

連假後的第一個上班日,祝大家有愉快的心情,雙手奉上龍蝦義大利麵的食譜,希望大家"視"吃愉快:)

DSC01167番茄奶油醬煮起來是粉紅色的,加上水煮的新鮮龍蝦肉以及義大利麵,視覺和味覺雙重享受~上桌前再撒些帕馬森起司,餐廳的風味也可以簡單在家裡呈現。如果龍蝦不好買的話,用蝦子肉代替也可以~

水煮龍蝦的作法再跟大家複習一下,一鍋水燒開後(水量只要能淹過龍蝦即可),加入一匙鹽以及一匙米酒,將兩隻龍蝦尾放進去,蓋上鍋蓋水煮八分鐘,取出用刀或者廚房簡單剖成兩半就可以了。煮龍蝦的湯汁可以酌量加一些進去番茄奶油醬裡,讓整道菜的風味更一致。因為我自己也加了一些煮義大利麵的湯進去,所以沒有另外加鹽調味。

附上我使用的天使麵包裝,其實是在超市隨便拿的,因為先生喜歡吃細麵,所以選擇天使麵,其實義大利麵的寬細都沒關係,都可以使用!

 

Directions:

  1. Cook and drain spaghetti. Set aside for later use.
  2. Boil lobster in water until cooked. Remove the meat from lobster and cut into small pieces.
  3. Cook 10 small tomatoes in cast iron pan until soft, then mash the tomatoes with spatula. Next, add 160 c.c. cream, 80 c.c. white wine and 80 c.c. lobster cooking water.
  4. Bring the sauce to boil, add some spaghetti cooking water if needed. Lastly, toss in lobster meat and spaghetti. The dish is ready to be served.

米粉下水煮的時候不要煮得太爛,當米粉已經完全呈白色,還有一點點硬硬的時候就放到另一個蓋上蓋子的鍋子中悶熟,炒的時候就不會擔心把米粉炒爛了。

作法上沒有加太多油,配合打好的南瓜泥充分與米粉拌炒,米粉吃起來也有濕潤的口感,還能充分吸收南瓜的味道以及營養。起鍋前加上烏醋,好吃的金瓜米粉就可以上桌了

媽媽的味道-木須炒麵

10990814_1540795386190257_54713507326590761_n先把木耳、紅蘿蔔絲、豬肉絲與香菇絲等料先備好後,依序加入即可,簡單好吃的家常好味道。

 

 

Ingredients:

• 2 eggs, beaten
• 1 teaspoon soy sauce
• 1/2 teaspoon salt
• 1/2 teaspoons sesame oil
• 1 teaspoon Worcestershire Sauce
• Some chopped garlic, and chopped green onion
• 6-oz Thin sliced tender Pork
• sliced Cloud ears, carrot and Chinese mushroom
• Some Bean-sprouts
• Noodles for two people

Procedures:
1. Prepare hot water to cook noodles, add some oil and salt into the water.
2. Prepare the scramble egg.
3. Stir fried chopped garlic, chopped green onion, bean-sprouts, thin sliced tender pork, scramble egg in oil or sesame oil together with sliced cloud ears, sliced carrot, sliced Chinese mushroom. Add soy sauce, salt, Worcestershire Sauce and 3 teaspoons water into the pan.
4. When the noodles are ready, blend noodles with all materials which are stir fried. Before serving, put white pepper on top. 木須炒麵1
