砂鍋香菇炊飯

這道簡單的炊飯是用砂鍋煮的,砂鍋煮出來的炊飯拌勻後帶有鍋底微微焦香的鍋氣,讓炊飯味道更豐富。當然,用電鍋煮也可以喔,外鍋加3/4杯水應該就可以了~

在此要提醒大家的是,
1.米要先泡20分鐘,泡好後要瀝乾,以便計算你的水量。
2.米的比例和湯湯水水比例大約為1:1.3,視覺上水只比米多一點點,沒有完全淹過,主要是因為炒過的料還有一些些湯汁,這樣煮出來的飯比較乾一些,若喜歡濕潤一點的炊飯口味,雞湯可以再加多一點點,稍稍比米多一點點就好。
3.我的調味偏清淡,喜歡重口味一點的,可以多加一點點醬油。

炒烏龍麵Stir-fry Udon Noodles

DSC08741-001除了wholefood之外,在洛杉磯最喜歡逛的超市就是日本超市了。而這道菜也是在逛日本超市的時候想起,"阿,好久沒有炒一盤烏龍麵了",靈感就這樣降臨了。和朋友一起逛超市最好玩,看看食材,討論做法和彼此喜歡吃的口味,也是激發靈感的好方法。你們也喜歡和朋友或者家人一起上超市閒聊買菜嗎?

其實我也不知道這樣是不是日式口味(搔頭),但我可以確定的是,這個做法跟以前在台大後門的台式日本料理小店吃的味道一模模一樣樣,好吃的口味,簡單的做法,很值得大家試試看。

炒烏龍麵變化非常多,只要掌握基本的醬汁做法,可以放喜歡的海鮮、蔬菜或者牛肉片、雞肉絲進去。放的順序也會因為食材的特性而有所不同,若為雞肉或者豬肉,可以一開始就和洋蔥香菇一起炒,但若為牛肉片、海鮮類,在起鍋前再進去拌炒,避免炒得太老。

procedure:

1.Prepare some thinly sliced shiitake mushrooms, sliced kamaboko, thinly sliced onion and 5 pieces of clams.

2.Stir fry onions until tender, add in kamaboko and sliced shiitake mushrooms. Stir fry shiitake mushroom until tender, then add in 2 tsp of rice wine, 2 tsp of dark soy sauce, 1 tsp of mirin and adequate amount of chicken broth.

3.Add in udon noodles and clams when chicken broth starts boiling. Remove the clams once their shells have opened. Stir fry udon noodles until the sauce becomes thickened. Stir in a handful of green vegetable and mix well. Transfer the stir-fry to serving plate and top with the clams. The dish is ready to be served.

味增烤魚Grilled Miso Fish

 

DSC08401我敢打包票,這道菜媽媽應該會喜歡。

DSC08391其實想試這道菜的原因,是某天和小夫妻檔朋友去吃壽司時,他點了一道烤魚,魚一上桌沒五分鐘就被分食完畢,那道烤魚吃起來非常香,又帶有甜味,我們邊吃邊猜測作法時,他得意地說"我媽媽常做喔,這是用味噌醃的",對我而言太有趣,原本只有鹹味的味噌怎麼能展現如同烤鰻魚般的香味呢?回家一查才知道,原來醃料中除了味噌還加了味霖,甜味應該是從味霖來的,做法簡單又下飯,加上味噌具有很高的營養價值,非常推薦大家試試看。

提醒大家,要將醃好的魚送進烤箱以前,要先用餐巾紙把魚肉上的味噌擦掉,一來避免太鹹,二來怕上頭覆蓋的味噌烤焦了,愛自意喔(台語)~

 

PROCEDURE:

1. I used sea bass for this dish. I think all types of white fish fillet are suitable for this recipe.

2. Prepare a zip lock bag. Combine one teaspoon of rice wine, one teaspoon of mirin and one teaspoon of white miso together in the bag. Add in fish fillet. Refrigerated overnight.

3. Preheat the oven at 400F, bake the fish for 20 minutes. Then, set the oven to grill function to brown the surface of the fish. This dish is DONE

Casserole Broccoli, easy and tasty!

ingredients:
*broccoli
*unsalted butter
*cream: 50 ml
*all purpose flour: 2 teaspoons
instruction:
1.put some salt into water, boil broccoli until it is softened
2.prepare the cream sauce: melt butter in the pan, add 50 ml cream and 2 teaspoons of all purpose flour, mix them well
3.pour the cream sauce into baking tray, mix them with softened broccoli.
4.put pizza cheese on the top, bake it with 350 degree for 15 minutes.
